Having sex with Juliette, who had had her likeness stolen from a spell, gave Nick his powers back, but the spell was originally linked to Juliette and Adalind, so it doesn't seem to me to be any more than that: spells get messed up when used on Grimms and there's always some sort of unintended consequence, like Nick becoming a zombie, but not being controllable by the voodoo guy (whose name escapes me), or like Nick being blinded, but gaining super hearing. I'm pretty sure that she's become a hexenbiest, and it's because of the way that spells don't quite work exactly as expected when used on grimms. Also, there's no reason to think that Juliette having a baby would be a hexenbiest, since it would be Nick's and grimm babies are completely normal. This happened because of a spell that linked her to Adalind, and she's already had negative pregnancy tests which worked just fine for Adalind when she got pregnant. Humans and wessen can mix without turning one into a wessen.
